Who doesn’t love a good grilled cheese?! I remember eating grilled cheese all the time as a kid. My dad would make it for my brothers and me but he had his own way of doing it. My crazy dad would sprinkle sugar on the cooked grilled cheese. Of course we LOVED it! Our baby sitters thought we were all sugar-crazed lying little kids when we told them our dad put sugar on our grilled cheese sandwiches. We could never get them to put sugar on them like our dad would. This is my favorite spin on a classic grilled cheese (minus the sugar). Oh my goodness it is yummy! Especially the homemade pesto.
Ingredients
French Bread
Fresh mozzarella cheese sliced
3 Roma tomatoes sliced
Double batch of Pesto
Salt
Butter
Directions
- Cut the bread into slices. Take a slice and put butter on one side and 1 to 2 tablespoons of pesto on the other side.
- Place buttered side down onto pan. Layer with tomatoes and mozzarella slices. Sprinkle with a little bit if salt. Place another buttered slice of bread on top and cook till golden on the bottom and then flip. Cook until golden on the other side and cheese is melted.
