Gluten Free, Dairy Free Italian Sausage Soup
1 pound Italian chicken sausage
1 medium onion
4 cups chicken broth
2 small russet potatoes
1 bunch kale
1 cup canned coconut milk
3 cloves of garlic
pinch of crushed peppers
- In a large pot cook the Italian sausage until cooked through. Chop up the medium onion and cook with the sausage until translucent.
- Add the 4 cups of chicken broth and bring to a boil. Slice the potatoes and add to the pot. Cook until potatoes are done.
- Chop up the kale into small pieces and mince the garlic and add to the pot. Cook until Kale is wilted.
- Stir in the cup on coconut milk and add salt and pepper to taste. Add a pinch of crushed pepper and serve while warm.
