Helloooo! Sometimes in the summer I’m not in the mood for a fresh salad or a cold smoothie. Sometimes I just want a warm comforting meal. Living in Arizona though the last thing you want to do is turn on the oven or fry something up on your stove. This crockpot meal is the perfect solution for the warm comfort food craving without heating the whole house up! The key to this is getting precooked sausage links. I like to get mine from Costco or Trader Joes. They have lots of different kinds. All of them are yummy. For this recipe I used spicy Italian chicken sausage. So tasty! And it adds a tiny bit of spice to the lentils. Enjoy!
Servings: 3 to 4
Ingredients
1 onion
3 garlic cloves
4 cooked chicken sausage links
1 1/2 cups brown lentils
4 cups vegetable broth
4 cups chopped kale
Directions
1. Chop onion and mince garlic
2. Place all ingredients except the kale into the crock pot and cook on high for 3 hours
3. Mix kale into the the lentils. And cook for an additional 10 minutes
4. Serve with some delicious garlic ciabatta bread

Hey Elle! Do you know about how many servings you get from this recipe? I’ve always been kind of scared of kale, but this looks so good, I’ll have to finally try it out! Also, I’ve never bought/cooked with lentils before. What exactly should I look for? Can you usually find them near the rice while shopping? Sorry for all the questions! I just dont want to mess anything up : ) haha!

Hey Natalie! Thanks for commenting. You can get about 3 to 4 servings from this recipe. I love kale especially when its cooked : ) I buy my lentils from Sprouts. They are in the front section in the bins. I got the brown lentils for this recipe but there are many different colors. I believe you can find lentils in most other grocery stores in the same area as the dried beans.
