Fresh and Easy Quiche

Quiche

I feel like quiche is so versatile. I could eat it any time of day. Breakfast, lunch or dinner. To me, quiche and a side salad for lunch sounds just as lovely as quiche with bacon for breakfast. There are so many other varieties you can make as well. This recipe happens to be my favorite basic quiche that I will usually make for breakfast. I love it with bacon. Did I mention I love bacon?

Quiche Slice
Ingredients

4 eggs
3 egg whites
2 chopped tomatoes
1 bunch of asparagus cut into 1″ pieces
1/4 onion finely chopped
4 cups spinach
1/4 teaspoon salt
1/3 cup feta cheese

Directions

1.  Whisk eggs and egg whites in large bowl.

2.  Wilt the spinach in a pan and let cool. Squeeze out excess water from spinach and chop.

3.  Add the tomatoes, asparagus, onion, spinach, salt and feta cheese to the egg mixture and mix together.

4.  Pour into an oiled pie-baking dish and bake in the oven for 45 minutes at 350˚.
