Max and I like to get Greek food all the time. We always go to the same restaurant. One time we were eating Greek with Max’s parents and his mom asked me if I’ve ever tried making Greek chicken. I realized I hadn’t and that was just a shame because as I’ve come to find out it’s actually pretty easy and extremely tasty too! And the tzatziki sauce that goes with it is just the best! I love to eat this Greek chicken and tzatziki sauce with a simple side salad and some rice. Mmmm it is so satisfying and flavorful!
Ingredients
Chicken and marinade
2 chicken breasts or 1 pound of chicken
Juice from one lemon
1/8 cup olive oil
1 clove garlic minced
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1 tablespoon red wine vinegar
Tzatziki sauce
1 cucumber peeled and grated
1 cup Greek yogurt
1 clove garlic minced
1 tablespoon lemon juice
1/8 cup chopped dill
1/2 teaspoon salt
Directions
1. Combine marinade ingredients in a medium bowl and mix.
2. Cut chicken into bite-sized pieces and mix into marinade. Cover with plastic wrap and leave in the fridge to marinade for 30 minutes
3. While chicken is marinating prepare the tzatziki sauce by pealing a grating an entire cucumber. Take cheesecloth and fold in half twice. Use the cheesecloth to squeeze out the water from the grated cucumber
4. Combine the cucumber, Greek yogurt, minced garlic, lemon juice, chopped dill and salt. Mix together and let sit in the refrigerator until the chicken is cooked
5. Heat up a frying pan and remove the chicken from the bowl using tongs into the frying pan. Cook until golden brown in the bottom and turn over and cook in the other side till golden brown as well. Make sure chicken is cooked through.
6. Serve chicken and tzatziki sauce with your favorite side salad and some rice. Enjoy!
