Italian Sausage Soup

Gluten Free Dairy Free Italian Sausage Soup - The Study of Yum

Gluten Free, Dairy Free Italian Sausage Soup

Ingredients

1 pound Italian chicken sausage
1 medium onion
4 cups chicken broth
2 small russet potatoes
1 bunch kale
1 cup canned coconut milk
3 cloves of garlic
pinch of crushed peppers

Instructions

  1. In a large pot cook the Italian sausage until cooked through. Chop up the medium onion and cook with the sausage until translucent.
  2. Add the 4 cups of chicken broth and bring to a boil. Slice the potatoes and add to the pot. Cook until potatoes are done.
  3. Chop up the kale into small pieces and mince the garlic and add to the pot. Cook until Kale is wilted.
  4. Stir in the cup on coconut milk and add salt and pepper to taste. Add a pinch of crushed pepper and serve while warm.
