Tuna Burger

Tasty Tuna Burgers! I came up with this meal because I wanted to incorporate more fish into my diet and some more protein.  This recipe is a great way to do both.  Also I am gluten and dairy free and that totally follows along with that as well. Sometimes I am hesitant to eat canned fish but I got this recipe idea in my head and I went ahead and tested it out anyway.  I was really surprised! It tasted really fresh and not fishy at all.  I wouldn’t recommend this meal as leftovers however.  Something about reheating it changes the taste.  I am such a huge fan of fresh food.

White Bean Chicken Chili

So I really had it in my mind that I wanted to make a white bean chicken chili.  My first attempt at creating a recipe and making it, it was good but it wasn’t mmmm yum good.  After another attempt I came up with this recipe. So much better! This recipe is creamy and flavorful. You can totally make it your own by adding lots of yummy toppings. I personally like to add lime, cilantro and a sprinkle of cheese….

Lentil Black Bean Tacos

Lentil Black Bean Tacos

Tacos are awesome! I made these lovely guys on Cinco de Mayo. Just getting around to posting them. The cool thing about these is they are vegan. If you haven’t tried vegan food I dare you to make these tacos. I dare you! ;P These tacos are so good! Max and I are seriously obsessed with them. And keep in mind Max is a meat lover. Not only are the lentils and beans pretty flavorful but the guacamole and pico really just send it over the top. I never tried guacamole until Max made me try his recipe a little after we got married. I’m totally hooked! Now for the pico de gallo. I make it a little different than most. I’m really not a fan of raw onion so I just substitute it with some finely minced garlic. I love garlic so I think this is some of the best pico in the world. Enjoy!…

Stuffed Bell Peppers

Stuffed Bell Pepper

BELL pepper. bell PEPPER. I’ve discovered that I say bell pepper in a unique way. Max teases me about how I say bell pepper. I guess I put an emphasis on ‘pepper’, instead of on ‘bell’ like most people do… Whatever it’s normal to me! He redeems himself by saying it’s cute. So I’ve tried a couple of different stuffed bell pepper recipes.  I didn’t really like either of them very much, which is weird because I’m usually a sucker for these guys. They were both vegetarian. Don’t get me wrong, I love my vegetarian and vegan meals, but for this particular dish I prefer the ground turkey.

I decided to whip up my own recipe and it turned out great! We liked them better than those other recipes 😛  I discovered I like to cut the bell pepper in half vertically from the top of the stem down. Not only does it look good, but I feel like you can get more stuffing in your pepper than if you just cut the top off and stuffed it that way. You can really pile the filling on when you cut the bell pepper in half 🙂 I hope you enjoy these stuffed bell peppers as much as I do. Plus they are healthy without sacrificing any of the yummy-ness. It couldn’t get any better then that!
