So I really had it in my mind that I wanted to make a white bean chicken chili. My first attempt at creating a recipe and making it, it was good but it wasn’t mmmm yum good. After another attempt I came up with this recipe. So much better! This recipe is creamy and flavorful. You can totally make it your own by adding lots of yummy toppings. I personally like to add lime, cilantro and a sprinkle of cheese.
Ingredients
2 tablespoons of Olive oil
1 medium onion chopped
2 large cloves of garlic minced
3 tablespoons flour
32 oz. chicken broth
2 cans of white beans drained and rinsed
½ can of diced tomatoes
1 cup of frozen corn
½ teaspoon cumin
½ teaspoon salt
4 oz. can of diced green chilies
1 pound of grilled chicken breast
Directions
1. Sauté onion and garlic in olive oil until onions are slightly translucent. Add flour and stir in with olive oil and onions and cook for about a minute.
2. Slowly add in a little bit of chicken broth at a time while mixing and making sure there are no clumps.
3. Add in remaining ingredients, bring to a boil and simmer for 15 minutes
