I’ve been making this Mexican quinoa salad for quite some time now. It was one of the first quinoa recipes that I ever tried. I knew after I made this that I was totally hooked. I remember discovering this dish when Max and I were living in our first place in Hawaii. Oh my goodness you guys wouldn’t believe how tiny our place was. It was literally a bedroom, a kitchen and a small bathroom. Basically a small box, but in paradise. There was no stove or oven and very little counter space so I made this meal by prepping everything on our tiny table and boiling water with a hot plate. Good times… We were there for about 5 months in the very beginning of our marriage. I love thinking back to that time. This goes to show you how simple this meal is. All you have to do is cook the quinoa and add your veggies and dressing. Simple, delicious and makes great leftovers for lunch the next day. YUM!

Greek Chicken with Tzatziki Sauce
Max and I like to get Greek food all the time. We always go to the same restaurant. One time we were eating Greek with Max’s parents and his mom asked me if I’ve ever tried making Greek chicken. I realized I hadn’t and that was just a shame because as I’ve come to find out it’s actually pretty easy and extremely tasty too! And the tzatziki sauce that goes with it is just the best! I love to eat this Greek chicken and tzatziki sauce with a simple side salad and some rice. Mmmm it is so satisfying and flavorful!

Tomato and Mozzarella Pesto Pasta
I honestly can’t think of a better way to use pesto. This just might be one of my favorite recipes involving pesto ever. This is one of those recipes where there are usually never any leftovers. And if there happens to be a little bit of leftovers, they are pretty much gone as I am trying to put the last bit into Tupperware. I find myself constantly sneaking a bite or two because I just can’t stop eating the stuff!
Funny story about this pasta… I love tomatoes and Max is ok with them, but he really hates the seeds in the middle. So he fishes out every tomato and squeezes out the seeds and then he will proceed to eat the pasta. Cracks me up.

Caprese Grilled Cheese
Who doesn’t love a good grilled cheese?! I remember eating grilled cheese all the time as a kid. My dad would make it for my brothers and me but he had his own way of doing it. My crazy dad would sprinkle sugar on the cooked grilled cheese. Of course we LOVED it! Our baby sitters thought we were all sugar-crazed lying little kids when we told them our dad put sugar on our grilled cheese sandwiches. We could never get them to put sugar on them like our dad would. This is my favorite spin on a classic grilled cheese (minus the sugar). Oh my goodness it is yummy! Especially the homemade pesto.

Pupukea Naan Vegetable Wrap
When Max and I were living in Hawaii we loved going to all the yummy food trucks. There were a lot of good ones! One of my favorite trucks was Pupukea Grill. Every time I went I got the same thing. I tend to do that when I go to restaurants and find something I really like. What I would always get was this seriously delicious grilled vegetable wrap. It had tasty hummus with lettuce tomato and cucumber lightly drizzled with a slightly sweet vinaigrette. It was topped off with perfectly tender grilled veggies and a sprinkle of goat cheese. Man! It was so full if flavor and freshness. The thing is pretty big and I always gobbled it up. I made my attempt at recreating this favorite if mine, and I was pleasantly surprised! I never thought I would be even halfway decent at replicating a meal I’ve had at a restaurant, so I was pretty thrilled after making this and taking a bite out of it. It also comes together really quickly and makes great leftovers. Good food that makes good leftovers makes me really excited.

Quick and Tasty Basil Pesto
A couple of weekends ago Max and I were hanging out with some friends. It was a fun time! We played volleyball at the park and then went and got ice cream at this super cool place called Subzero. If you haven’t been, you need to go! They mix liquid creams under liquid nitrogen and it freezes right before your eyes. After that we went and played games at our friends house. I asked my friends what kind of recipes they would like to see on the blog. My friend Metzli replied and said that she would like to see a pesto recipe. I love love love pesto and thought it would be a great thing to do. So that’s where the inspiration came for today’s recipe. Homemade pesto is super delicious. It’s amazingly fresh and so flavorful. I can’t stand a dull pesto. Max is weird with his pestos, and he liked this one a lot. The basil pesto comes together quickly and is perfect to give some life to your pasta. Stay tuned because there’s lots of ways I’ll be using this yummy pesto 😀

White Bean Chicken Chili
So I really had it in my mind that I wanted to make a white bean chicken chili. My first attempt at creating a recipe and making it, it was good but it wasn’t mmmm yum good. After another attempt I came up with this recipe. So much better! This recipe is creamy and flavorful. You can totally make it your own by adding lots of yummy toppings. I personally like to add lime, cilantro and a sprinkle of cheese….
Spicy Beans and Greens Over Sweet Potato
Do you guys like sweet potatoes? I do 🙂 the majority of the time when I’m looking for sweet potatoes at the grocery store I can’t find the typical orange colored potatoes. These white ones are just as good though!
These spicy beans and greens served on top of the sweet potato is super tasty! There are 3 different types of beans with delicious cooked kale. I feel like a lot of people try raw kale for the first time and hate it. If you hate kale and have never tried it cooked I highly recommend you give it another try. I love how it soaks up the flavor of the other things it’s cooked with. I got the idea for these spicy beans and greens from this vegan app I downloaded a couple of years ago. It’s called 21-Day Vegan Kick Start. I haven’t tried all the recipes on there but the few I have, have been super delicious. If you happen to actually be vegan you should totally download this app! I hope you guys love this recipe as much as I do.
P.S. This was a tough one to photograph, because let’s be honest… potatoes, kale and beans, don’t make the most photogenic combination. But they make a great combination on my taste buds 🙂

Cowboy Cookies
Woohoo! Cookies are now on The Study of Yum! Cookies are kind of a weakness for me. Especially the morning after I’ve made them. If I see them sitting on the kitchen counter I can’t help but eat a few and call it breakfast. So bad but so good!
Now these cookies are a family recipe. My family has been making these for as long as I can remember. We usually make them when we are all bored and craving sweets on a Sunday night. They whip up really fast and before you know it your sneaking spoonfuls of cookie dough before they are scooped onto the baking sheet. I really do think these are some of the best cookies in the world. But I’m probably biased because I’ve been eating them forever. However there’s no denying that they are delicious. There’s nothing healthy about these cookies except that there are oats in them. I hope you enjoy these cookies on a lovely Sunday evening and possibly for breakfast on Monday. 😉

Fresh and Easy Quiche
I feel like quiche is so versatile. I could eat it any time of day. Breakfast, lunch or dinner. To me, quiche and a side salad for lunch sounds just as lovely as quiche with bacon for breakfast. There are so many other varieties you can make as well. This recipe happens to be my favorite basic quiche that I will usually make for breakfast. I love it with bacon. Did I mention I love bacon?
